It’s cocktail time!

Wow, this week has been all about unicorns and mermaids and wrinkles. I think we all need a drink.

And a vacation.

Today I wasted a good hour checking out Francis Ford Coppola’s ridiculously awesome eco-resorts in Central and South America. Why? Because my brain checks out at the beginning of every summer. I can’t help it, the weather heats up and I want to travel. I’m particularly obsessed with his property in Belize. I spent half a summer there years ago. Although I was young and broke, it was amazing and I had a wonderful experience. But I would love to go back and stay here:

I want to stay here. (click pic for website)

I’m only telling y’all this so you can understand my recent predilection for fruity cocktails. What can I say? Tropical locales pair well with fruit. Since it doesn’t look as though I’ll be hopping on a plane this weekend, the next best thing is a fruity tequila drink…

Yum!

Melon Margarita (yes, watermelon, again. I can’t help it, they are fucking delicious)

  • 4 oz Pureed watermelon (just stick chunks of it in the blender)
  • 2 oz White tequila
  • 1 oz Triple Sec
  • 2 oz sweet and sour mix

Add watermelon, sweet and sour, tequila, and triple sec along with seven or eight ice cubes in blender, then blend on high. Squeeze lime into glass before pouring drink. Garnish with lime wheel.

*Last week someone asked me if you puree the entire watermelon. The answer is of course you do. You will definitely want another cocktail, and you should share with friends and family. Be a giver.

Going somewhere for the summer? Let us live vicariously through you in the comments!

  1. Timely…I got a deal offer for a trip to Morocco this morning. It’s super, super tempting. Unfortunately, I never know what my work schedule looks like the many months in advance I would need to book it. But a smidge over $2K for 10 days mostly inclusive (about 75% of meals, air, lodging, tours, ground transportation, etc.) is very nearly too good to pass up. And while I don’t know what airline the tickets are on, and it would be nice to make a higher status level for a decently long flight, I already secured my status through all of 2013, so I’m tempted not to care (and it’s an international flight, so bags will be free anyway).

  2. Belize is very near the top of my foreign places to go! I am waiting for the perfect combo of a 4 night stay groupon and vacation time from work.

This summer’s only planned vacation is to the Outer Banks, NC, a yearly tradition. I got so busy at work I never planned the trip to Yellowstone I wanted to take, so next summer. If I’m lucky I may squeeze something else small in there.
